Bulk Recipes

Apple Pie Overnight Oats

This seasonal recipe makes for the perfect filling fall breakfast – easy (and tasty) as pie!

Ingredients

  • ½ C oats
  • ¾ C milk or milk alternative
  • ½ C applesauce
  • 1 t maple syrup
  • ½ t cinnamon
  • ¼ t vanilla extract
  • Dash of salt
  • For toppings: fresh apple, cinnamon, butter or coconut oil, maple syrup, walnuts

Instructions

In a glass jar, mix all ingredients except toppings. Cover and put in fridge for at least 4 hours, preferably overnight.

Just before you’re ready to eat, dice up a fresh apple and sauté in pan with a small pad of butter (or coconut oil), a dash of cinnamon and maple syrup if using tarte apples for added sweetness. Top oat mixture with cooked apples & chopped walnuts. Enjoy!

Lentil Soup

A simple soup with a great, unique flavor.

• 1 large onion, finely chopped
• 1¾ C red lentils
• 7½ C vegetable stock
• 1 t cumin
• juice of ½-1 lemon
• salt and pepper, to taste
• olive oil, to taste

If using bouillon cubes, powder, or paste, make stock. Combine
onion, lentils, and stock. Simmer about 30 min, or until lentils have
disintegrated. If the soup seems too thick, add water to reach desired
consistency.

Add cumin, lemon juice, and salt / pepper to taste. Drizzle olive oil on
top to taste and serve.

Variations:
1. Add 2 peeled and chopped tomatoes while cooking.
2. 1t turmeric and hot chilies.
3. Add 1lb fresh shredded or a 1/2lb frozen spinach 10 minutes before
the end of cooking.
